    An official GlenAllachie, an 11 year old, 2008, at 54.2%. Deep and dark, all baked apple, honey and a chocolate, with red berry, plum and a dry spice from the cask. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. Its four stills carry downward angled lyne arms for a fuller spirit. This is the sherry led malt of Aberlour.

    This official GlenAllachie, an 11 year old, from 2008, cask 5923, at 54.2%. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was designed almost entirely gravity fed, an efficient plant for its time. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.

    It was distilled to a full, generous cut, for a thick, ester rich spirit the casks then deepen. Maturation came in a Port cask, layered over the full GlenAllachie make. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full bodied spirit takes active wood well, carrying its dark sugars through the years. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit.

    Bottled at a cask strength 54.2%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, with red berry, plum and a dry spice from the cask. A dark chocolate and a soft oak give it weight. A long finish carries raisin, chocolate and a treacle. This is GlenAllachie's deep, fruity Speyside style.
