It runs very long fermentations for a thick, fruity, ester rich spirit. This is a rich Speyside malt of dried fruit and chocolate.

GlenAllachie from the distillery, a 20 year old, from 2005, cask 725, at 59.2%, a festival bottling. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit.
Drawn from a thick, full bodied wash, shaping a rich Speyside body with real weight. Maturation came in an Oloroso cask, layered over the full GlenAllachie make. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. The wood frames the spirit without ever stripping the full Speyside body. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. Active first fill wood drives the maturation, the cask deep in the malt.
Bottled at a cask strength 59.2%, it is deep and concentrated. Orange, raisin and a treacle edge, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. It finishes long, full and fruity. This is the sherry led malt of Aberlour.
