An official GlenAllachie, a 12 year old, 2008, at 56.8%, a festival bottling. Raisin, chocolate and a warm spice run through it, with raisin, date and treacle from the cask. It matures in sixteen dunnage warehouses on the Aberlour site. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. This is a rich Speyside malt of dried fruit and chocolate.

Description
A 12 year old GlenAllachie, a distillery bottling, from 2008, cask 669, at 56.8%, released for a whisky festival. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
Taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. It was matured in a Pedro Ximenez cask, the wood working deep into the malt. Through integration spirit and wood marry, vanillin rounding out as esters lend riper orchard fruit and a chocolate depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
Bottled at a cask strength 56.8%, it is deep and concentrated. Fig, walnut and a bittersweet chocolate, with raisin, date and treacle from the cask. The body is full and rich, the fruit deep and dark. A deep finish ends on dried fruit and a dark chocolate. This is a deep, sherried Speyside single malt.
