A 31 year old GlenAllachie from the distillery, at 50.7%. Rich and full, with raisin, fig and a bittersweet chocolate, with raisin, date and treacle from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. A rich, deep Speyside single malt of dried fruit and chocolate. This is a full bodied Speyside single malt of real richness.

Description
A 31 year old GlenAllachie, a distillery bottling, from 1989, cask 6117, at 50.7%, 339 bottles in all. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It was built for the 1960s blend boom, its make long destined for the blender's vat.
Run slowly off the spirit still, shaping a rich Speyside body with real weight. Maturation came in a Pedro Ximenez cask, layered over the full GlenAllachie make. In its ethereal years the malt turns waxy and oxidative, faded esters and a whisper of sotolon over dark fruit. Active first fill wood drives the maturation, the cask deep in the malt.
Bottled at a cask strength 50.7%, it is deep and concentrated. A rich orchard sweetness and dark sugar, with raisin, date and treacle from the cask. A dark chocolate and a soft oak give it weight. A long finish carries raisin, chocolate and a treacle. This is a Speyside single malt of real standing.
