Known for its heavy sherry and wine cask maturation. Water comes from the Lochnagar Burn off the slopes of Ben Rinnes. This is a rich Speyside malt of dried fruit and chocolate.

Description
This official GlenAllachie, a 30 year old, from 1990, cask 6510, at 52.1%, 308 bottles in all. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.
It was distilled in copper pot stills, giving a full bodied Speyside spirit. It was fully matured in a Pedro Ximenez cask, the wood deep in the rich spirit. Ethereal and fragile, the decades draw it to a resinous, waxy depth of dried fruit, treacle and old oak. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate. The wood frames the spirit without ever stripping the full Speyside body. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.
Bottled at a cask strength 52.1%, it is deep and concentrated. A rich, sherried sweetness, with raisin, date and treacle from the cask. The mouthfeel is full and coating, the fruit dark and sweet. The finish runs long, full and warming. This is a rich Speyside malt of dried fruit and chocolate.
