    A 14 year old GlenAllachie from the distillery, at 58.9%. Rich and full, with raisin, fig and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. A rich, deep Speyside single malt of dried fruit and chocolate. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. This is a Speyside single malt of real standing.

    This official GlenAllachie, a 14 year old, from 2007, cask 804406, at 58.9%, 716 bottles in all. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was designed almost entirely gravity fed, an efficient plant for its time. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.

    Run slowly off the spirit still, building a deep malt of dried fruit and dark sugar. It was matured in an Oloroso cask, the wood working deep into the malt. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At a hearty 58.9% it carries real weight. A deep, dark sweetness, with dried fruit, fig and walnut from the cask. Beneath it run dried fruit, dark sugar and a warm spice. A long finish carries raisin, chocolate and a treacle. This is GlenAllachie's deep, fruity Speyside style.
