This official GlenAllachie, a 14 year old, from 2006, cask 6838, at 61%, 703 bottles in all. GlenAllachie is a Speyside single malt, long a blending malt and now a sherry led name in its own right. It was built for the 1960s blend boom, its make long destined for the blender's vat. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. It was designed almost entirely gravity fed, an efficient plant for its time.

Distilled to a full, generous cut, building a deep malt of dried fruit and dark sugar. It was fully matured in a Pedro Ximenez cask, the wood deep in the rich spirit. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full bodied spirit takes active wood well, carrying its dark sugars through the years.

At a natural 61% it is full and rich. A rich, sherried sweetness, with raisin, date and treacle from the cask. It is full and fruity, the spirit carrying the cask. Dried fruit, spice and a soft oak see it out. This is a rich Speyside malt of dried fruit and chocolate.
