An official GlenAllachie, a 12 year old, 2009, at 56.2%. Deep and dark, all baked apple, honey and a chocolate, with dried fruit, fig and walnut from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. Built by Mackinlay McPherson, the firm that supplied Shackleton’s 1907 expedition. This is the sherry led malt of Aberlour.

Description
This official GlenAllachie, a 12 year old, from 2009, cask 800206, at 56.2%, 708 bottles in all. GlenAllachie is a Speyside single malt, the home distillery of master distiller Billy Walker. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.
It was taken gently through wash and spirit stills, giving a full bodied Speyside spirit. Maturation came in an Oloroso cask, layered over the full GlenAllachie make. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The full spirit deepens with time, the cask drawing out its darker register. Maturation runs slow and even in the on site dunnage warehouses at Aberlour. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 56.2% it is rich and chewy. Date, fig and a warm cinnamon, with dried fruit, fig and walnut from the cask. Fig, honey and a dark chocolate fill the middle. The finish runs long, full and warming. This is a deep, sherried Speyside single malt.
