Description
An 8 year old GlenAllachie, a distillery bottling, at 48%. It belongs to GlenAllachie's Wood Finish Series. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. It matures its spirit in sixteen dunnage warehouses on the distillery site at Aberlour.
Run slowly off the spirit still, for a full make built to take active wood. It was matured in ex-Bourbon oak and given a further cask finish, the second wood over a soft vanilla. At an extractive age eugenol lends a clove note and lactones a coconut, the spirit rich, fruity and full. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The casks are picked closely, the wood matched to the rich GlenAllachie make. The wood frames the spirit without ever stripping the full Speyside body.
At its natural 48% it is rich and chewy. Date, fig and a warm cinnamon, with a warm oak spice. Beneath it run dried fruit, dark sugar and a warm spice. A deep finish ends on dried fruit and a dark chocolate. This is the sherry led malt of Aberlour.
