    A 28 year old GlenAllachie from the distillery, at 54.6%. A deep, dark malt over a full, rich body, with dried fruit, fig and walnut from the cask. Built for the blend boom of the 1960s, now a sherry led single malt. Founded in 1967 below Ben Rinnes near Aberlour, in Speyside. This is a rich Speyside malt of dried fruit and chocolate.

    This official GlenAllachie, a 28 year old, from 1990, cask 2517, at 54.6%, 526 bottles in all. GlenAllachie is a Speyside single malt from the hills above Aberlour, below Ben Rinnes. It runs unusually long fermentations, up to a hundred and sixty hours, for a thick, ester rich and fruity spirit. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. It was founded in 1967, designed by the architect William Delme Evans, his fourth distillery after Jura and Tullibardine.

    It was run slowly off the spirit still, for a thick, ester rich spirit the casks then deepen. It was fully matured in an Oloroso cask, the wood deep in the rich spirit. Through the evaporative decades the esters fold into raisin, fig, beeswax and a bittersweet chocolate. Long ageing turns the fresh notes towards date, prune and a dark, bittersweet chocolate.

    At its natural 54.6% it is rich and chewy. A rich orchard sweetness and dark sugar, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. A deep finish ends on dried fruit and a dark chocolate. This is a deep, sherried Speyside single malt.
