Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this GlenAllachie, a 15 year old, at 66.2%. Rich and full, with raisin, fig and a bittersweet chocolate, with dried fruit, fig and walnut from the cask. Its four stills carry downward angled lyne arms for a fuller spirit. This is the sherry led malt of Aberlour.

A 15 year old GlenAllachie from Signatory Vintage, distilled in 2009, from cask 900863, at 66.2%, one of 561 bottles. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It was mothballed in 1985 and reopened in 1989, a modern distillery by Speyside standards.
Distilled in copper pot stills, giving a full bodied Speyside spirit. An Oloroso cask held it, drawing the rich spirit on over the years. Into oxidative maturity, slow air builds ripe esters and a darker chocolate, fig and date depth. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The full spirit deepens with time, the cask drawing out its darker register. Vanillin and oak lactones from the wood lend vanilla and a soft coconut over the fruit. The casks are picked closely, the wood matched to the rich GlenAllachie make.
At its natural 66.2% it is rich and chewy. Raisin, chocolate and a warm spice, with dried fruit, fig and walnut from the cask. Dried fruit and a treacle sit behind the spice. The finish runs long, full and warming. This is the sherry led malt of Aberlour.
