    Signatory Vintage, the Edinburgh house that bottles at Edradour above Pitlochry, bottled this GlenAllachie, a 13 year old, at 63.7%. A deep, dark malt over a full, rich body, with dried fruit, fig and walnut from the cask. Revived in 2017 by master distiller Billy Walker, it now leads with single malt. This is a rich Speyside malt of dried fruit and chocolate.

    This GlenAllachie was bottled by Signatory Vintage, a 13 year old, distilled in 2008, from cask 900372, at 63.7%, one of 678 bottles. GlenAllachie is a Speyside single malt, founded in 1967 below Ben Rinnes near Aberlour. It was built for the 1960s blend boom, its make long destined for the blender's vat. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit.

    It was taken gently through wash and spirit stills, building a deep malt of dried fruit and dark sugar. Maturation came in an Oloroso cask, layered over the full GlenAllachie make. By the integrating teens the raw notes fade and esters build, the rich spirit growing rounder and darker. The full bodied spirit takes active wood well, carrying its dark sugars through the years.

    At 63.7%, undiluted, it is dark and full. Baked apple, honey and a dark chocolate, with dried fruit, fig and walnut from the cask. The body is full and rich, the fruit deep and dark. The finish runs long, full and warming. This is a deep, sherried Speyside single malt.
