This official GlenAllachie, a 12 year old, at 48%. It is one of GlenAllachie's Wood Finish Series bottlings. GlenAllachie is a Speyside single malt known for its heavy sherry and wine cask maturation. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes.

The spirit was taken gently through wash and spirit stills, giving a full bodied Speyside spirit. Ex-Bourbon matured, it was given a finish in a Marsala cask for a final sweetness. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full spirit deepens with time, the cask drawing out its darker register. Active first fill wood drives the maturation, the cask deep in the malt. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time.

At a hearty 48% it carries real weight. Fig, walnut and a bittersweet chocolate, with a raisined, herbal sweetness from the cask. It is full and fruity, the spirit carrying the cask. A long finish carries raisin, chocolate and a treacle. This is a dark, fruity Speyside single malt.
