Description
A 12 year old GlenAllachie, a distillery bottling, at 48%, 6600 bottles in all. This is part of the Virgin Oak Series. GlenAllachie is a rich, sherried Speyside malt from Aberlour, built on full bodied spirit and active casks. It was designed almost entirely gravity fed, an efficient plant for its time. It was bought in 2017 by Billy Walker and two partners, fresh from selling BenRiach, GlenDronach and Glenglassaugh.
The spirit was worked unhurried through the stillhouse, for a thick, ester rich spirit the casks then deepen. A refill bourbon hogshead held it, keeping the full character to the fore. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. Years in oak deepen the spirit to a darker gold, the body growing rounder and more resinous with time. The casks are picked closely, the wood matched to the rich GlenAllachie make. The full spirit deepens with time, the cask drawing out its darker register.
At its natural 48% it is rich and chewy. Orange, raisin and a treacle edge, lifted by a sweet oak. Fig, honey and a dark chocolate fill the middle. It finishes long, full and fruity. This is GlenAllachie's deep, fruity Speyside style.
