This official GlenAllachie, an 11 year old, at 48%. This is part of the Wood Finish Series. GlenAllachie is a Speyside single malt, revived in 2017 by the team of Billy Walker. Under Walker it turned to single malt, with heavy maturation in sherry and wine casks. Its water is the Lochnagar Burn, drawn down from the slopes of Ben Rinnes. Its stills were doubled from two to four within months of opening, the lyne arms angled down for a fuller spirit. It was built by Mackinlay McPherson, the firm that supplied whisky to Shackleton's 1907 expedition.

The spirit was distilled in copper pot stills, shaping a rich Speyside body with real weight. Ex-Bourbon matured, it was given a finish in an Oloroso cask for a final sweetness. In integration coconut and vanilla knit with the malt, the orchard notes deepening to sultana, date and chocolate. The full spirit deepens with time, the cask drawing out its darker register.

Bottled at a cask strength 48%, it is deep and concentrated. A rich, sherried sweetness, with dried fruit, fig and walnut from the cask. A dark chocolate and a soft oak give it weight. The finish is rounded, dark and spiced. This is GlenAllachie's deep, fruity Speyside style.
