Description
G.H. Mumm is one of the best-known houses in Champagne, and Cordon Rouge, marked by its red sash, is its signature non-vintage Brut. The blend is built from Pinot Noir, Chardonnay and Pinot Meunier: Pinot Noir gives structure and backbone, Chardonnay brings elegance and freshness, and Pinot Meunier fills in the fruit. It is made by the traditional method, with the defining second fermentation taking place in bottle. After that the wine spends several years ageing on its lees in the cellars, and it is that contact that builds the brioche and biscuit character alongside the fruit.
The colour is light golden yellow with a fine, lively bead. The nose gives citrus, green apple and white flowers, with brioche and yeasty depth from the lees. The palate is fresh and elegant, apple, pear and citrus carried by a lively acidity, the finish finely structured and long. Serve at 6 to 8 degrees in a white wine glass or flute. It makes a fine aperitif and suits oysters, seafood, white fish, poultry and milder cheeses.
