Description
Francois Carillon, a Burgundy vigneron, selected this ten-year Montebello, marrying Carrere's Guadeloupe agricole with the influence of Puligny-Montrachet white burgundy. Distilled on a column still from fresh sugar-cane juice and aged in ex-bourbon oak before its wine-cask shaping, it is bottled at 46.8%, the vineyard pedigree informing the whole expression.
The nose pairs cane-derived woody and vanilla notes with clear white grape and wine; the palate stays on grapes and wine, soft and layered with a sweet, fruity body; the finish turns fresh and lively, sugarcane and young wood over a sour, fruity edge. It keeps Montebello's agricole backbone while laying fresh white-grape and gentle oak over the top, never growing heavy. This is a graceful, contemplative pour aimed squarely at drinkers who move between fine wine and aged cane-juice rum and enjoy seeing the two meet.
