Description
Four Pillars work out of Healesville in the Yarra Valley, and master distiller Cameron Mackenzie built this Olive Leaf gin around an ingredient most makers overlook. Fresh olive leaves, sourced from a local farmer, are infused during distillation, joined by olive oil and macadamia for savoury richness. Around them sit lemon, grapefruit, bay leaf, rosemary, lemon myrtle, coriander, lavender, juniper and orris, a blend that reads more like a Mediterranean lunch than a gin recipe.
The nose is fruity and citrus-bright, with spice, juniper and that telltale olive-oil note. The palate turns sweet and fruity, lemon and spice meeting juniper, lavender, bay and a brush of olive, all the way to a long finish. It is built for a Dirty Martini, a sliver of olive in the glass and the savoury botanicals doing the rest.
