Flor de Caña 25 Años is made by Compania Licorera in Nicaragua, a producer that positions itself firmly on slow ageing and a no added sugar approach, which sets it apart from the sweeter end of the Spanish style. It is molasses based and column distilled, giving a light, clean spirit whose character is meant to come from the barrel rather than from dosage.

Aged in ex-bourbon oak, it shows caramel, toffee and coffee with soft baking spice and a vanilla, mocha tinged finish. The body is light and the delivery very smooth at 40%, drier and more restrained than a Diplomatico or Zacapa, though that lightness means the finish is fairly short and the oak does most of the heavy lifting.
