Description
Champagne Drappier is based at Urville in the Aube, and Grande Sendrée is its flagship vintage cuvee, made only in good years from old vines on a distinctive plot. The 2015 blends Pinot Noir and Chardonnay in roughly equal measure, drawing power from the former and finesse from the latter. Made by the traditional method, it is aged at length on the lees in the house cellars, which builds the toasted, nutty complexity that marks a mature prestige Champagne. A restrained Brut dosage keeps the wine dry and lets the vinous depth show. It arrives in a gift box.
The colour is a full golden yellow with a fine, persistent bead. The nose is layered, with toasted bread, hazelnut and biscuit over ripe apple, white peach and citrus peel. The palate is broad and structured, with a creamy mousse and a long, dry, mineral finish. Serve at 8 to 10 degrees in a white wine glass to allow the aromatics to open. It suits an aperitif for an occasion and shows well with lobster, fine fish and aged cheeses.
