Description
Champagne Drappier has been family-owned since 1808 and works from Urville in the Côte des Bar, where Pinot Noir thrives on Kimmeridgian limestone and chalk. Carte d'Or is the house flagship, built from 80 percent Pinot Noir with Chardonnay and a little Meunier, close in spirit to a Blanc de Noirs. Only the first pressing is used, vinification runs on gravity, and around 5 percent of the wine sees oak while roughly 40 percent reserve wine adds depth. Made by the traditional method with lees ageing, it carries a low 5 g/l dosage that keeps the style precise. This half-bottle suits a smaller occasion.
The wine is a luminous gold with a fine, persistent bead. The nose is intense with white vineyard peach, apricot and other stone fruit. The palate is powerful, complex and vinous, with a spicy edge, a biscuity depth and remarkable structure, the finish long and marked by quince. Serve at around 7 degrees in a white wine glass. It works as an aperitif and alongside white meat, poultry, firm-textured fish and regional Chaource cheese.
