Description
Drappier farm at Urville in the Aube, where Pinot Noir is the leading grape, and the Carte d'Or is their signature non-vintage brut with Pinot Noir at its core alongside some Chardonnay and Pinot Meunier. It is made by the traditional method, with the second fermentation taking place in bottle and an extended rest on the lees, during which autolysis builds the bready, biscuity character that defines classic Champagne. The house is known for a low dosage, so the wine reads dry and fruit-forward.
The colour is a pale gold with a fine, steady stream of bubbles. The nose opens on apple and pear, moving to toasted bread, biscuit and a touch of white flowers. The palate is dry and rounded, the orchard fruit carried by a fine mousse and a citrus-peel lift, closing long and savoury. Serve at around eight to ten degrees in a white-wine glass or tulip. It works as an aperitif and with shellfish, white fish and hard cheeses.
