Don Q Double Cask (Pedro Ximenez)

Don Q Double Cask Pedro Ximenez comes from Destileria Serralles in Puerto Rico, a distillery bottling that ages its rum and finishes it in PX sherry casks. Around four to five years old and bottled at 44% without added sugar, it offers a notably drier take on the sweet sherry cask format.

The profile is woody and roasted with cinnamon and dried fruit on the nose, then a round, roasted, raisin laced palate, finishing woody, fresh and nutty. Unusually for a PX finish, the absence of dosage keeps it balanced rather than syrupy, letting the cask add dried fruit and spice without tipping into dessert sweetness. At 44% it carries decent presence, if a touch restrained in power. The result is a well balanced, fruit and wood driven rum, a good choice for drinkers who like sherry cask character but prefer it kept dry and honest.
