An official Deanston, a 15 year old, 2004, at 55.7%. Honeyed and waxy, all baked apple and a creamy malt, with raisin, date and treacle from the cask. Mothballed in 1982, it was revived in 1990 under Burn Stewart. It is the only distillery in Scotland to make all its own power from the river. This is Deanston’s waxy, fruity Highland style.

Description
This official Deanston, a 15 year old, from 2004, at 55.7%. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. The spirit is condensed in shell and tube condensers for a clean, fruity make.
It was distilled slowly for a clean, fruity spirit, the long ferment building a fruity, estery character. Maturation came in a Pedro Ximenez cask, layered over the fruity Deanston make. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and pear) and a honeyed depth over the wax. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. Refill oak lets the waxy, honeyed Deanston character lead the way. Maturing in the vaulted stone warehouse, the spirit develops slow and steady. Long ageing turns the fresh fruit towards honey, dried fruit and a soft spice. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.
At 55.7%, undiluted, it is deep and honeyed. A waxy, malty sweetness, with raisin, date and treacle from the cask. Beneath it run green apple, pear and a soft honey. The finish is rounded, honeyed and gently spiced. This is a green, honeyed Highland malt with a waxy heart.
