A 16 year old Deanston from the bottler Whisky AGE, 2009, at 56.3%. A bright, honeyed Highland fruit of apple and pear. Its old weaving shed is now a cool stone warehouse for the casks. Mothballed in 1982, it was revived in 1990 under Burn Stewart. A waxy, honeyed Highland malt from 100% Scottish barley. This is Deanston, the mill turned distillery on the Teith.

Description
From the bottler Whisky AGE, a 16 year old Deanston, distilled in 2009, from cask 300845, bottled at 56.3%, one of 171 bottles. Deanston is a soft, malty Highland single malt from the old Adelphi cotton mill at Doune. It was mothballed in 1982 and revived in 1990 under Burn Stewart.
Worked through a long ferment and the bulbous stills for a waxy, fruity make, the long ferment building a fruity, estery character. Maturation came in ex-Bourbon wood, the oak quiet behind the fruity spirit. Through oxidative maturity esters concentrate, apple and pear turning honeyed over the waxy body. Maturing in the vaulted stone warehouse, the spirit develops slow and steady. The site was the Adelphi cotton mill, built in 1785 by Sir Richard Arkwright and turned to whisky in 1965. The long ferment and clear wort give a fruity spirit that ages with grace. River Teith water and a long ferment give the fruity, estery Deanston make.
At a natural 56.3% it is full and waxy. Baked apple, honey and a creamy malt, with a soft vanilla from the oak. A dried fruit and a soft oak give it depth. The finish is rounded, honeyed and gently spiced. This is a green, honeyed Highland malt with a waxy heart.
