Description
An official release of Deanston, a 17 year old, from 2002, at 49.3%, 3102 bottles in all. Deanston is a Highland single malt, the old cotton mill at Doune turned distillery in 1966. The mill ran for 180 years before cotton declined and the site became a distillery.
It was worked through a long ferment and the bulbous stills for a waxy, fruity make, for a soft, waxy make of green apple and honey. It was matured in a Pedro Ximenez cask, the wood working slowly into the waxy malt. At oxidative maturity vanillin and lactones are fully expressed, the malt deepening over its waxy weight. Unchillfiltered and at natural colour, it keeps the full waxy body in the glass. The cool, even temperature of the old weaving shed gives a slow, steady maturation. The spirit is condensed in shell and tube condensers for a clean, fruity make. Its wash is fermented long, for a fruity, estery character.
At cask strength 49.3% it is full bodied. Honey, malt and a gentle clove, with raisin, date and treacle from the cask. A dried fruit and a soft oak give it depth. The finish is long, waxy and gently spiced. This is a waxy, honeyed Highland single malt.
