An official Deanston, a 12 year old, 2008, at 52.7%. A bright, honeyed Highland fruit of apple and pear, with dried fruit, fig and walnut from the cask. Bottled unchillfiltered and at natural colour, it keeps a full waxy body. Water comes from the River Teith, which also drives the distillery turbine. This is Deanston, the mill turned distillery on the Teith.

Description

An official release of Deanston, a 12 year old, from 2008, at 52.7%, 13227 bottles in all. Deanston is a waxy, honeyed Highland malt made in a former mill on the banks of the Teith. It uses 100% Scottish barley and bottles its malt unchillfiltered, with no added colour.

It was distilled from unpeated Scottish barley in bulbous copper stills, for a soft, waxy make of green apple and honey. An Oloroso cask held it, shaping the honeyed spirit over the years. In integration lactones (coconut) and vanillin (vanilla) knit with the spirit, the green apple deepening to honey. Active wood frames the fruit without overwhelming the soft Highland spirit. Its old weaving shed, once full of looms, is now a cool stone warehouse for the casks. The spirit is condensed in shell and tube condensers for a clean, fruity make. It runs an open top mash tun, two wash and two spirit stills of a bulbous shape.

Bottled at a cask strength 52.7%, it is rich. Honey, malt and a gentle clove, with dried fruit, fig and walnut from the cask. It is fruity and waxy, the malty spirit shining through. It finishes long, waxy and warming. This is Deanston, the mill turned distillery on the Teith.
