Description
De Bernard source this Prosecco Superiore from Valdobbiadene, the steep hillside heart of the Prosecco DOCG in the Veneto, where the Glera grape gives its most refined expression. It is a millesimato, made from a single vintage, and produced by the tank method, in which the second fermentation takes place in pressurised stainless steel over a short period to lock in Glera's delicate, primary aromatics. Finished brut, it is drier than the more familiar extra-dry Prosecco style.
The colour is a pale straw with a fine, gentle mousse. The nose is fresh and floral, showing green apple, pear and white flowers with a touch of lemon and peach. The palate is light and dry, the orchard fruit carried by a crisp acidity and a clean, honeysuckle-tinged finish. Serve cold at around six to eight degrees in a white-wine glass or flute. It makes an excellent aperitif and pairs with seafood, salads and lighter antipasti.
