Description
De Bernard draw this Prosecco Superiore from Conegliano, the eastern anchor of the Prosecco DOCG in the Veneto that gives the classic zone its full name of Conegliano Valdobbiadene. The grape is Glera, and the wine is made by the tank method, with the second fermentation carried out in pressurised stainless steel to preserve the fresh, floral fruit. It is finished extra dry, which despite the name carries a touch more sugar than brut and rounds out the palate.
The colour is a pale straw with a fine, foaming bead. The nose shows apple, pear and white peach lifted by white flowers and honeysuckle. The palate is light and softly off-dry, the fruit balanced by a fresh acidity and a clean, lemony finish. Serve cold at around six to eight degrees in a white-wine glass or flute. It makes a popular aperitif and suits antipasti, seafood and lightly spiced dishes.
