Dailuaine Flora & Fauna – Cask Strength 17 Years Old 1980

Flora & Fauna – Cask Strength
    700ml / 63%
    Single Malt

    $2006

A 17 year old Dailuaine from the distillery, at 63%. Full bodied and fruity, with orchard fruit, malt and a warm spice. Single malt Dailuaine is rare, so most come from independents. Its big stills give a full bodied spirit that loves sherry wood. The name is Gaelic for the green vale in which it sits. This is a rich, malty Speyside single malt.

An official release of Dailuaine, a 17 year old, from 1980, at 63%. Dailuaine is a Diageo Speyside distillery, its robust malt the backbone of many a blend. In 1889 it became the first distillery to use the pagoda roof, the Doig Ventilator designed by Charles Doig.

The spirit was made in large copper stills for a rich, robust make, for a big, full Speyside spirit. It was matured in refill ex-Bourbon oak, vanilla and a soft honey behind the rich malt. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, savoury grip. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. It passed to DCL and Scottish Malt Distillers in the 1920s and was later modernised. It had its own railway siding and a little locomotive, Dailuaine No.1, known as the Puggy.

At 63%, undiluted, it is deep and fruity. A heavy, malty fruitiness, with a soft vanilla from the oak. The texture is full and rich, the fruit lifted by a meaty malt. The close is long, fruit over a rich malt. This is a rich, malty Speyside single malt.
