Description
A 24 year old Dailuaine from the Pitlochry bottler Signatory Vintage, distilled in 1997, from cask 6026 + 6027, bottled at 50.5%, one of 369 bottles. Dailuaine, whose name is Gaelic for the green vale, is a heavy, full bodied Speysider. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.
Run through the distillery's big copper stills, for a rich, meaty make that suits sherry wood. It was matured in refill ex-Bourbon oak, vanilla and a soft honey behind the rich malt. At this evaporative stage ellagitannins lend a drying structure while oxidation builds a richer, meatier fruit. The clean spirit shows the cask clearly, vanilla and fruit over a rich malt. It sits near Aberlour, in the heart of Speyside by the River Spey. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
At its natural 50.5% it is concentrated. Dried fruit, malt and a rich, savoury depth, with a soft vanilla from the oak. The texture is full and rich, the fruit lifted by a meaty malt. The finish is deep, rich and savoury. This is Dailuaine, a backbone of the great blends.
