A Dailuaine of a 17 year old chosen by the London merchant Berry Bros and Rudd, distilled in 2007, from cask 07062, bottled at 55.8%. Dailuaine is the rich, malty Speyside single malt that helped build the Johnnie Walker blends. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
Distilled in large conical necked stills on Bailliemullich Burn water, for a big, full Speyside spirit. It rested in ex-Bourbon oak, the wood adding vanilla and a soft honey. Into oxidative maturity, slow air ingress builds fruity ethyl esters (apple and dried fruit) over the meaty, malty depth. Refill oak lets the robust Dailuaine character lead, malt and dried fruit beneath. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The big stills give a heavy spirit that takes a long, sherried maturation in its stride.
At a natural 55.8% it is full and honeyed. A robust, sherried maltiness, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. The finish runs meaty, fruity and warm. This is one of Speyside's heavier single malts.
