From the Glasgow bottler Douglas Laing, a 15 year old Dailuaine, distilled in 2007, from cask DL 15753, bottled at 54.1%, one of 578 bottles. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.
The spirit was made in large copper stills for a rich, robust make, building the heavy Dailuaine style. Maturation in an Oloroso cask laid dried fruit over the meaty, malty spirit. At oxidative maturity aldehydes and esters lend dried fruit while ellagitannins add a drying, savoury grip. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. The full bodied make rewards a long, patient maturation in good wood. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice. Maturation in the cool north east keeps the rich spirit balanced over the years.
At 54.1%, undiluted, it is deep and fruity. Malt, dried fruit and a rich spice, with dried fruit, fig and walnut from the cask. A baked fruit and a warm spice lift it. A full, malty finish ends on dried fruit and a warm spice. This is a rich, malty Speyside single malt.
