A Dailuaine of a 14 year old chosen by Scotland's oldest independent bottler Cadenhead's, distilled in 2008, bottled at 46%. Dailuaine is a rich, meaty Speyside single malt from the banks of the Spey near Aberlour. The name is Gaelic for the green vale, after the hollow in which the distillery sits.
The spirit was distilled for the heavy, full bodied spirit Dailuaine is known for, to build a robust, malty, sherry loving character. A Pedro Ximenez cask added raisin, date and a treacle sweetness. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. Most Dailuaine goes quietly into blends, a robust filler kept in part as single malt. Its rich, robust malt has long been a backbone of the Johnnie Walker blends. The rich, full bodied spirit takes cask flavour well, especially sherry wood. The distillery was founded in 1852 by William Mackenzie on the banks of the Spey at Carron.
At 46% it is smooth and honeyed. Orchard fruit, malt and a warm spice, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. The close is long, fruit over a rich malt. This is Dailuaine's heavy, meaty Speyside style.
