This Dailuaine was bottled by the bottler CS James & Sons Ltd, a 13 year old, distilled in 2010, from cask 303767, bottled at 54.5%, one of 282 bottles. Dailuaine sits at Carron on the Spey, a big, sherried Speyside malt rarely seen on its own. Most of its make goes to blending, with a Flora and Fauna sixteen year old the regular single malt.

The spirit was made in large copper stills for a rich, robust make, to build a robust, malty, sherry loving character. A refill bourbon hogshead held it, keeping the rich character to the fore. Integration folds eugenol (clove) and vanillin (vanilla) into the malt, the heavy body fuller and richer. Maturation in the cool north east keeps the rich spirit balanced over the years. The full bodied make rewards a long, patient maturation in good wood. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice.

At cask strength 54.5% it is full bodied. Baked fruit, fig and a savoury depth, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. The finish is deep, rich and savoury. This is the rich, full bodied Speyside malt of Dailuaine.
