A Dailuaine of a 12 year old chosen by Scotland's oldest independent bottler Cadenhead's, distilled in 2013, bottled at 46%. Dailuaine is a heavy, fruity Speyside single malt from near Aberlour. A fire in 1917 destroyed the maltings, and the distillery was rebuilt soon after.
The spirit was made in large copper stills for a rich, robust make, to build a robust, malty, sherry loving character. An ex-Bourbon barrel shaped it, vanilla beneath the robust, full bodied spirit. Through integration spirit and wood marry, vanillin settling into vanilla as ethyl esters lend a riper orchard fruit over the meaty malt. The rich, full bodied spirit takes cask flavour well, especially sherry wood. The name is Gaelic for the green vale, after the hollow in which the distillery sits. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills. The cool Speyside air gives a slow, even maturation, the heavy malt deepening.
At 46% it is clean and soft. A rich, full bodied sweetness, with a soft vanilla from the oak. A baked fruit and a warm spice lift it. A long, full finish carries a savoury depth. This is the rich, full bodied Speyside malt of Dailuaine.
