Dailuaine 12 Years Old 2011 Cask #302623 (Brave New Spirits)

A Dailuaine of a 12 year old chosen by the bottler Brave New Spirits, distilled in 2011, from cask 302623, bottled at 56.4%, one of 343 bottles. Dailuaine is a Diageo Speyside distillery, its robust malt the backbone of many a blend. Water comes from the Bailliemullich Burn, the spirit drawn off three wash and three spirit stills.

The spirit was drawn off three wash and three spirit stills, giving the heavy, meaty spirit at its heart. An Oloroso hogshead lent fig, raisin and a savoury, nutty depth, the heavy spirit soaking it up. By the integrating teens congeners fade and esters build, the rich, full bodied spirit growing rounder. Vanillin and oak lactones from the wood lend vanilla and coconut over the meaty malt. It had its own railway siding and a little locomotive, Dailuaine No.1, known as the Puggy. Years in oak round the spirit, the fruit deepening to dried fruit and a savoury spice.

At a natural 56.4% it is full and honeyed. A rich, full bodied sweetness, with dried fruit, fig and walnut from the cask. It is robust and fruity, the full bodied spirit shining through. The finish is long, rich and savoury. This is Dailuaine's heavy, meaty Speyside style.
