Description
Col Sandago produce this Prosecco under the DOC covering the Veneto, made from the Glera grape in the fresh, approachable style that the region is known for. The fizz is developed by the tank method, with the second fermentation in pressurised stainless steel over a short period, which preserves the light, floral, primary aromatics rather than adding lees or oak character. It is finished extra dry, a touch softer than brut on the palate.
The colour is a pale straw with a fine, foaming bead. The nose is fresh and floral, showing apple, pear and white peach with white flowers and honeysuckle. The palate is light and gently off-dry, the orchard fruit carried by a crisp acidity and a clean, lemony finish. Serve cold at around six to eight degrees in a white-wine glass or flute. It makes an easy aperitif and pairs with seafood, salads and lighter antipasti.
