Description
Col Sandago, run by the Zanetti family of Segafredo, makes this Prosecco Superiore DOCG in the province of Treviso, with a new cellar close to the vineyards in Susegana that lets the fruit be pressed quickly and its freshness kept. The wine is made from Glera by the tank method, the second fermentation running in pressurised stainless steel under controlled temperature to protect the grape's fresh, floral aromatics. The extra dry dosage, with residual sugar in the region of 14 to 17 grams per litre, leaves a gentle fruity roundness while the wine stays lively and balanced. A natural cork finishes the bottle.
The colour is pale straw with a fine, lively perlage. The nose shows green apple, pear and white peach over white flowers, with a touch of citrus peel and a hint of apricot. The palate is fresh and elegant, the soft, balanced sweetness carried by clean acidity to a soft, clean finish. Serve well chilled at around 6 to 8 degrees in a white wine glass. It makes a stylish aperitif and suits light starters, white fish, salads and shellfish.
