The Ardbeg Committee was founded in 2000, two years after Glenmorangie's acquisition, as a brand club channelling rare bottlings to enrolled members ahead of general release. The Committee Christmas 2006 was an annual ritual release of this period, with cask #1375 selected from the 1975 archive and bottled at the start of November in time for member dispatch. 522 bottles from a single sherry butt for UK distribution.
Filled into a Spanish sherry butt on 28 March 1975 and bottled on 8 November 2006 at 54.2% ABV, non chill filtered and natural colour. The 600 litre butt format slows extraction relative to smaller hogsheads while loading the spirit with the dense oxidative sherry chemistry across thirty one years. Documented fill and bottling dates make this one of the few Ardbeg releases of the era with full provenance recorded on the label.
Sherry butt maturation delivers melanoidins from the Maillard sugar amino reaction in the residual sherry impregnated staves, polyphenols (gallic acid, ellagic acid) extracted from Spanish oak, and rancio sotolon from long oxidative ageing. Over thirty one years on Islay these compounds bind to the 1975 peat phenols, shifting the smoke register from kilning sharpness toward leather, dried fig, dark chocolate and bitter walnut. The Ardbeg purifier ester pool persists as concentrated orange peel and stewed orchard fruit beneath the sherry oxidation, a signature of long matured sherry cask Ardbeg from the Hiram Walker era.
