Debowa Polska, the family distillery founded in 1982 in Siedlec, western Poland, builds its whole range around oak, and DP-21 Excellent is one of its more theatrical bottlings, presented on a wooden stand in the shape of a large syringe. Underneath the gimmick is the standard Debowa method: a grain spirit distilled several times and filtered through charcoal to strip impurities, with a piece of oak wood left inside the bottle to lend a quiet, woody character over time. That oak contact is the signature, giving a clear vodka a faint tannic edge it would otherwise lack.
The nose is soft and cereal-driven. The palate is mild and gently tart, balanced and even, with woody notes threading through, and the finish is long. The wood is what to chase, so pour it neat at cool room temperature in a heavy short glass and sip it slowly, the way you would a light aged spirit, letting the oak and the soft grain unfold rather than burying them under ice or a mixer.
