Description
Debowa is produced in Poland by the Debowa Polska distillery, and oak is its whole identity, the name itself meaning oaken. The base is good Polish grain cut with crystal clear spring water, distilled for purity and softness in the usual way. What sets it apart is the contact with oak wood during maturation, which lends the spirit a light natural colour and draws out gentle flavours of vanilla, honey and soft spice, much as a barrel does for whisky. That wood note is the house signature, giving a clean grain vodka a rounded, faintly aged character without turning it into a brown spirit, all at 40% in a leather-strapped hunter's flask.
The nose is mild and elegant with fine wood, vanilla and cereal notes. The palate is soft and round with a gentle sweetness, light spice and subtle oak, finishing long and warm with a fine woody character. Because the oak gives this vodka real flavour, drink it the way you would a light aged spirit: neat in a small tumbler over one large ice cube, alongside a board of charcuterie and smoked cheese. The slow chill opens the vanilla and honey notes, and the savoury, salty food plays directly off the wood without any mixer getting in the way.
