Rooster Rojo Tequila Reposado

Rooster Rojo Reposado is a 100 percent Blue Weber tequila made at Fábrica de Tequilas Finos in the town of Tequila, at the foot of the Tequila volcano in Jalisco, with agave drawn from both Los Altos and the surrounding valley. The distillery runs from a colonial building dating to 1923 and aims at an honest standard tequila away from the bigger names.
The halved piñas are steam cooked in autoclaves for around ten hours, fermented up to seventy two hours with a house yeast, then twice distilled in stainless steel pot stills to keep the agave aromas clean. The reposado then rests two to six months in used French oak cognac casks, which give a gentle straw colour and a soft, lightly spiced character over a cooked agave core. Bottled at 38 percent.
