Description
Rooster Rojo Blanco is made at Fabrica de Tequilas Finos in the town of Tequila, at the foot of the Tequila hill in Jalisco, a working distillery housed in a colonial building dating to 1923. It is a 100% Blue Weber agave tequila drawing on agave from both Los Altos and the Tequila valley, positioned as an honest everyday Blanco away from the marquee names.
The halved piñas are steam cooked in autoclaves for around ten hours, then the juice is fermented with a house yeast strain over roughly seventy two hours. Distillation is a double pot run carried out in stainless steel stills, a clean approach meant to keep the natural agave aromatics intact. Bottled at 38%, it reads bright and straightforward, with cooked agave, citrus and a clean peppery finish that suits both sipping and cocktails such as a Paloma.
