Description
Gran Cava de Oro Extra Añejo is made at Tequilera Puerta de Hierro under NOM 1477, run by Leticia Hermosillo Ravelero in the Los Valles area of Jalisco, the house behind the Cava de Oro range. Where most extra añejo rests three years in ex bourbon wood, this one is matured a full five years, well beyond the category minimum.
The agave is gently cooked, fermented and twice distilled in a copper still, then laid down in French white oak barrels that previously held red wine. That long wine cask maturation explains both the unusually dark colour and the creamy, sweet character. The nose offers vanilla, cinnamon and nutmeg, while the palate leans into maple syrup and marzipan, oak forward and rounded as the agave recedes into the background after five years in wood.
