Description
Madre Mezcal is produced in small batches by several mezcaleros and their families across Oaxaca, and this ensamble brings together 70% Espadin, Agave angustifolia, and 30% Cuishe, a form of Agave karwinskii. Cooking, fermenting and distilling the two species together rounds the dry mineral edge of the karwinskii with the softer sweetness of espadin. It is an artesanal joven, bottled unaged at 45%.
The agaves are roasted in an earthen pit, then fermented with local well water and wild yeasts carried on the mountain air before distillation in the old family copper still. The result carries less smoke than many mezcals, leading instead with sweet and mineral aromas and subtle sage. On the palate, herbal notes of sage, earth and minerals unfold, followed by a long and floral finish. Balanced and gentle, it is an accessible way into ensamble mezcal.
