Description
Madre Espadín is a joven made entirely from fully mature Espadín, a light and clean mezcal built for easy drinking. It is produced in small batches by Carlos Blas and his family from agave grown on their farms in Miahuatlán, Matatlán and San Dionisio in Oaxaca, with the plants from each area roasted separately in pits so the source terrain stays distinct.
Pit roasting over wood gives the spirit its measured smoke, and the focus stays on a rounded, full bodied Espadín character rather than rugged intensity. The nose is bright and pure with earthy notes; the palate shows lively ginger and pine underpinned by sandalwood and a light mesquite smoke, finishing soft and smooth. Bottled at 40%, it sits at the gentle, approachable end of the category while keeping its cooked agave core.
