Description
Madre Tequila is an additive-free blanco built in a mezcal minded style to let the agave speak, the result of Madre Mezcal partnering with the Tequila El Tepozan distillery in Jalisco. The Blue Weber agave comes from a single highland estate in the Los Altos manner, the same single estate thinking seen at houses like Ocho, and the distillery also turns out the Pasote tequilas.
Production leans traditional and clean. The agave hearts are first cooked in a clay oven, then crushed with a roller mill, with the juice fermented in stainless tanks and twice distilled in stainless. It is bottled at a relatively high strength near 45 to 48%, which carries the aromatics. The nose opens on raw agave with a lift of citrus, while the palate shows caramelised agave and a clear minerality, the highland origin and the higher proof together keeping the agave forward and the texture bright rather than oaky.
