Habitation Beausejour is a Martinique estate working from fresh-pressed sugar-cane juice, and this H.B.S Decollage is an unaged blanc bottled unsweetened at 50% under the Martinique AOC, where only fresh cane juice is permitted and added sugar is banned. It presents the cane spirit raw and lively, without barrel time.

Distilled on a creole column run low to keep the green congeners, it delivers the freshness and snap that define a good blanc. The nose is vegetal and grassy with fresh sugar cane, the palate stays vegetal and fresh with a savoury tomato-leaf note and a floral lift, and the finish runs on sugar cane, mineral and grass. Dry and bright rather than sweet, with the higher proof adding grip, it is a textbook column-still Martinique white. It makes an excellent Ti Punch base, where lime and a touch of cane syrup let its grassy, vegetal character shine.
