La Perle Fine is a high-proof blanc from A1710, the agricole label at Habitation du Simon in Martinique, distilled from fresh sugarcane juice using both pot and column stills, a less common configuration that adds weight to the usual creole column profile. The 2021 arrives at a formidable 67.5%, the kind of unaged, full-throttle white that puts pure cane front and centre.
The profile is built on freshness, the nose all sugarcane, florals and a green olive note tipping toward the marine, the palate floral and fresh with cane and an iodine, briny edge that the pot still seems to deepen. It finishes on sugarcane, citrus and nutmeg with real warmth. The added-sugar status is unstated, but the style runs dry, and at this strength water is almost mandatory, opening the florals and marine notes. A blanc for someone who wants cane juice at full volume, neat with a few drops or in a fierce Ti' Punch.
